These are some of my favorites. I recommend getting them from the library before buying them, to find the one(s) that are most useful to you.
Gaia’s Garden by Toby Hemenway
This is a one of the best beginning permaculture books available. and it is a very good way to learn about food forests and forest gardening.
How to Make a Forest Garden by Patrick Whitefield
I found this book really helpful when I was first starting out designing forest gardens, and it remains one of my favorites. Evidently other people agree, since it is now on its third edition!
Intergrated Forest Gardening by Wayne Weiseman, Daniel Halsey, and Bryce Ruddock
This is a really good guide to the process of building successful guilds. It goes into the ecological basis for guild design, and makes the basic ecology involved very undestandable. It also has good, sound advice for implementing designs, based on the considerable experience of the authors. The last part of the book includes 15 different predesigned guilds, which makes for very interesting and inspiring reading.
My favorite nurseries for fruit and nut trees: the first three also carry rootstocks.
